OPAL Nutrients loves this super simple yet delicious avocado hummus. This recipe is filled with healthy fat, protein and dietary fiber. A great party recipe and kid friendly.
Ingredients:
2 | ripe avocados, peeled and seeded |
1 | can of chickpeas, rinsed and drained |
1 | large cloves garlic, minced |
1 Tbsp. | fresh lemon juice |
2 Tbsp. | avocado oil |
a dash | salt |
** To add nutritional benefits, add turmeric to the recipe. Most won’t taste it and the health benefits are fantastic. **
Instructions:
- Dice half the avocado and set aside.
- Place the remaining avocado, chickpeas, garlic, lemon juice and oil in a blender. Blend until smooth. Upon tasting add salt as desired.
- Gently stir diced avocado into hummus mixture.
- Drizzle with avocado oil
